One, this tastes great. Just give it a shot. Just like you, I have a busy life believe it or not so sometimes making food for the blog is daunting— let alone cooking for myself. So, obviously the best solution in said scenario is to be both creative and fast, which usually results in me playing Frankenstein with ingredients in my refrigerator.
Greek Style Chicken Skewers and Hummus
Hummus-Crusted Chicken | Gimme Some Oven
Recipe by: DiGiovine. I made this with one red and one yellow pepper in place of the green pepper and onion because that is what we prefer. I used Mediterranean Herb hummus which worked well for us. A side of rice I consistently use AR for ideas and the reviews are invaluable.
This past week while standing around on a photo shoot, my coworkers and I noticed that our conversations somehow kept circling back to food as often seems to happen! I was getting ready to go grocery shopping that night, so asked if anyone had any blog-worthy chicken recipes to recommend. Somehow the idea of using hummus as a sauce in baking had never occurred to me. But as soon as she mentioned it, the recipe moved to the top of my list. So this weekend, I picked up some chicken and my favorite hummus thought about going homemade, but I was in the mood for quick and easy.
Use leftover hummus to make a crispy, creamy topping for baked chicken! Add a squeeze of lemon and a salad for an easy, fresh and healthy weeknight meal. However, try as I might to get into the mug-of-cider-cozy-sweaters-pumpkin spice spirit of things, summer is very much still present here in Austin. The toasty temps outside remind me of this every minute! Scorching, incessant sun that keeps my favorite fall clothes on lockdown until at least November.
